Yogurt, being a fermented product, generally has a pH range of 4.4 to 4.8 and tends to become more acidic over time. In contrast, cow’s milk has a lower acidity with a pH between 6.7 and 6.9. Maintaining a stable pH balance is essential for yogurt to preserve its texture and prevent it from becoming overly sour. The company has stated that its yogurt cultures are designed to extend the shelf life of refrigerated yogurt.
With the yogurt market projected to reach $237 billion by 2028, as reported by Statista, DSM-Firmenich is seeking to strengthen its position in this sector. Karoline Kjaerulff, the company’s global business development manager for milk and plant-based products, noted that their offerings provide increased flexibility in the yogurt production process. “We are investing significantly in culture development because the potential is nearly limitless, and there are more flavors, textures, and health benefits to explore,” Kjaerulff stated. “These new cultures enhance our toolkit of fermented dairy solutions, which includes starter cultures, bioprotective and probiotic cultures, enzymes, hydrocolloids, and nutritional solutions.”
Achieving the right consistency in yogurt while minimizing the chances of undesirable flavors and textures is critical during production. Typically, longer fermentation results in a tangier flavor, while shorter fermentation yields a milder taste. According to DSM-Firmenich’s website, their Delvo Fresh Pioneer cultures can help maintain an optimal pH balance in yogurt, not only in cold conditions but also in warmer environments.
Since the completion of its merger earlier this year, the Dutch-Swiss firm has set its sights on advancing its position in the ingredients market through research and development, with an emphasis on products that promote sustainability, health, and well-being. Before the companies merged in 2022, analysts projected that their combined annual revenue could reach $12.3 billion, positioning them alongside other major ingredients companies like IFF.
