A recent visit to Trader Joe’s confirmed the validity of a college professor’s 15 years of research. Phillip Griffiths, an associate professor of plant breeding and genetics at Cornell University, has dedicated much of the past decade and a half to developing grape tomato varieties that meet consumer demand for more local, organic options with enhanced flavor, color, quality, and uniqueness. During his stroll through the store, Griffiths was reminded of the popular fruit that has remained mediocre in grocery stores across the U.S. and globally for decades.
“I noticed one of the medley mixes, and honestly, it didn’t look very appealing at all in terms of size and color variety,” Griffiths shared with Food Dive. “It struck me that there is a tremendous opportunity for improvement in this market.” As a recognized expert in tomatoes, Griffiths began significant research in 2004 aimed at capturing the colors and shapes found in heirloom varieties and transferring those traits through hand cross-breeding to create more portable and snack-friendly cherry and grape sizes.
After years of work, he refined his focus to seven or eight promising options, aiming to incorporate traits such as shape, better yield, flavor, functionality, and shelf-life durability. Eventually, he narrowed it down to five innovative tomato varieties, optimistically named the Galaxy Suite, which he believes will enhance the unattractive and mundane variety packs he observed in stores. The new line includes the yellow fingerling Starlight, the orange grape-shaped Sungrazer, the small red grape-shaped Comet, the marbled and striped Supernova, and the pear-shaped Midnight Pear. Griffiths noted that the naming trend reflects the increasingly creative names being assigned to produce, such as Cotton Candy grapes and the Cosmic Crisp apple.
These new tomatoes have sparked interest from retailers like Wegmans, which trialed them in its organic field last season, as well as a buyer from U.K. grocer Marks & Spencer. “They grew and produced well, and Phillip’s commitment to developing high-flavor varieties without compromising productivity really stood out,” stated Jess Crabtree, growing manager at Wegmans Organic Farm & Orchard. “Our customers are looking for fresh, local produce that is organically and sustainably grown, so any new locally produced varieties available for an extended growing season are appealing.”
A Vermont-based seed supplier is offering Galaxy Suite seeds this year to farmers interested in cultivating these tomatoes. If they receive positive feedback from farmers and retailers, Griffiths anticipates that production of Galaxy Suite tomatoes could increase in 2020 and beyond, with new varieties added. These tomatoes could eventually be found in farmers’ markets and premium retailers like Wegmans, Whole Foods, and Trader Joe’s, catering to consumers seeking variety and willing to pay a premium.
“Consumers are playing an increasingly significant role in the food industry, influencing the development of food products,” Griffiths remarked. This project was “not initiated with profits in mind, but rather from the desire to bring something new and exciting to the market.” He added that the Galaxy Suite tomatoes reflect many of today’s consumer trends. Shoppers are eager for innovative and interesting varieties they can enjoy on the go. Griffiths mentioned that he is currently working on over a dozen other options, including baby beefsteak tomatoes and tomatoes shaped like chili peppers.
“If these first five tomatoes are successful, we can keep the development process active by continuously introducing new varieties, keeping consumers engaged over time,” Griffiths said. “People are always intrigued by the latest and greatest, so maintaining a dynamic selection offers a fantastic opportunity to build a strong brand.”
