The Every Company is dedicated to creating animal-derived foods using precision fermentation technology, which involves altering yeasts to generate various proteins during fermentation. In March, the company introduced animal-free pepsin, an enzyme commonly found in chewing gum, cheeses, and gelatin, typically extracted from pig stomach linings. Following this, Every ClearEgg, its inaugural egg protein ingredient, was launched in October. This colorless, odorless, and soluble protein is naturally present in small quantities in egg whites and has been engineered for diverse applications to enhance nutritional profiles. It made its market debut in a smoothie from the juice company Pressed.

Arturo Elizondo, the CEO and founder of The Every Company, emphasized the importance of replicating this essential ingredient in a statement. “Egg white is one of the crown jewels of the food industry, renowned for its unique functional properties that have made it nearly irreplaceable – until now,” Elizondo remarked. “Today also marks the first time consumers across the U.S. can experience Every EggWhite, the culmination of seven years of extensive research and development.”

By successfully replicating egg white, The Every Company is able to attract a new audience: bakers. Egg whites are integral to numerous dishes and desserts, including meringues and soufflés. They are the key ingredient in macarons, the delicate sandwich cookies that originated in Paris during the 19th century, known for their flavorful, crunchy shells. Collaborating with Chantal Guillon, a bakery famous for its macarons, is a strategic move to showcase this new ingredient. In the announcement, Elizondo stated that this partnership serves as the “ultimate litmus test” for Every EggWhite.

Since its inception in 2014, The Every Company has made significant strides. In December, it secured $175 million in a Series C funding round, totaling its lifetime funding to $233 million. The company plans to utilize these funds to scale production and expand its range of animal-free protein alternatives, including potential products like calcium citrate malate vitamin D3 tablets.

To support its growth, The Every Company has established two major partnerships. Last year, it teamed up with BioBrew, a specialized division of AB InBev’s venture and innovation arm, ZX Ventures, to pursue precision fermentation on a large scale. Additionally, in 2019, the company collaborated with Ingredion to develop, market, and distribute its ingredients, which are all available through this prominent ingredient supplier.
