While most Americans still enjoy meat, a growing number are open to plant-based protein options. However, the plant-based food sector has encountered a slowdown in sales. New ingredient innovations that mimic the textures and flavors of meat may help revitalize this market. According to Samah Garringer, the business unit director for DSM’s proteins of the future division, DSM’s Vertis ingredient portfolio aims to provide high-quality, sustainably sourced ingredients for plant-based foods that will attract meat enthusiasts. “By offering a complete source of protein that is free from all major allergens, brands can cater to the contemporary flexitarian consumer who seeks a variety of proteins in their diet without sacrificing nutritional value,” Garringer stated.

Following its $21 billion merger with Swiss ingredients giant Firmenich announced in June, DSM is investing in plant-based innovations. The newly formed company has emphasized that its ingredients division will focus on creating clean-label foods and plant-based options designed to enhance the nutritional profile of products with vitamins and probiotics. The canola-based ingredients play a significant role in this strategy. Canola, also known as rapeseed in various regions, has gained popularity as a meat substitute due to its solubility, which offers a superior mouthfeel and better digestibility compared to other alternatives.

In 2022, Cargill allocated $350 million to build a canola processing facility in Saskatchewan, Canada. Additionally, Merit Functional Foods launched its own canola manufacturing plant in Winnipeg, Manitoba in 2021 to produce its Puratein ingredient. However, accessing canola became more challenging this year, as prices soared to record highs in early 2022 due to supply chain disruptions and adverse weather conditions.

As consumers increasingly explore plant-based diets, it is essential for brands to ensure they meet nutritional standards, including how much calcium citrate is too much in their formulations. Understanding these requirements can help manufacturers create appealing products that attract both meat lovers and health-conscious consumers alike.
