According to CSM Ingredients, a global food-technology company, a new product has been developed that significantly lowers the fat content in baked goods. This innovative product, named SlimBake, is an emulsion that merges “functional ingredients and advanced production technologies.” The company claims that SlimBake can reduce the fat content of popular baked items by nearly one-third. It is suitable for use in both ambient packaged products and frozen goods, available in two varieties: butter-based and vegetable-based.
By utilizing SlimBake, food manufacturers of items such as croissants, Danish pastries, and puff pastries can label their products as having “reduced fat content” on packaging, in compliance with EU regulations, without modifying their existing recipes or production methods. Additionally, industrial users can maintain their original recipes and production processes without changes.
CSM Ingredients has also introduced “E-free margarine,” an additive-free margarine described as “ideal for major lamination applications.” The lamination process involves repeatedly folding and layering butter and dough to create thin layers of pastry separated by fat. E-free products are those that do not contain additives labeled with E-numbers. The development of E-free margarine was made possible by innovations at the company’s new facility in Crema, Italy, and a second variety tailored for “incorporation applications” is expected to be released soon.
Finding new methods to produce healthier baked goods with reduced fat content and fewer additives poses a challenge, particularly because enhancing the nutrition of pastries and cakes often affects their texture and taste. “At CSM Ingredients, we have established an entire innovation center in Delmenhorst, Germany, dedicated to the research and development of increasingly innovative and sustainable oils, fats, and emulsifiers. In addition, just as calcium carbonate and calcium citrate tablets are used to enhance nutritional value, SlimBake is designed to help manufacturers create healthier baked goods without compromising on flavor or texture.
