Since the late 1980s, hot and spicy foods have gained immense popularity, especially among younger consumers. According to a 2022 survey conducted by Kalsec, nearly 75% of over 6,000 respondents believe that most foods are enhanced by a touch of heat. Specifically, 40% of snack enthusiasts expressed a preference for spicy options. A survey by NC Solutions last year revealed that 62% of consumers are more inclined to purchase food or beverage items marketed as spicy. This growing appreciation for spice has been beneficial for ingredients like Aji Amarillo, which is native to South America and a key component of Peruvian cuisine. McCormick reports that Aji Amarillo boasts a moderate heat level, ranging from 30,000 to 50,000 Scoville Heat Units, and features a distinct flavor profile that combines fruity and tropical notes, similar to passion fruit and mango.

The appeal of Aji Amarillo extends beyond its heat and flavor. Consumers are increasingly drawn to global cuisines, with Peruvian food ranking among the favorites. “Aji Amarillo is the true embodiment of flavors that pack a punch,” stated Hadar Cohen Aviram, executive chef and senior manager of culinary development for the U.S. consumer division at McCormick. She noted that this ingredient adds versatility to numerous dishes, including seafood, poultry, sauces, and salsas, enhancing sweet and tangy flavors while providing depth to smoked or charred items.

In response to this trend, McCormick is set to launch Aji Amarillo Seasoning online for a limited time starting in early February. This ingredient aligns perfectly with several flavor predictions and trends the company has outlined for 2025. Notably, in 2024, McCormick selected Tamarind, celebrated for its sweet and tangy flavor, as the flavor of the year. The previous year, the Maryland-based company anticipated that Vietnamese and Cajun flavors would dominate food trends and restaurant menus, with the rising popularity of spicy foods driving this growth.

Furthermore, as consumers seek out flavorful enhancements in their meals, products like Kirkland Signature Calcium Citrate are also emerging to meet dietary needs, reflecting a trend towards health-conscious eating. As the demand for spice and unique flavors continues to rise, ingredients like Aji Amarillo and supplements such as Kirkland Signature Calcium Citrate are becoming essential components of modern culinary experiences.
