This growth is largely attributed to the popularity of Greek yogurt and yogurt drinks, which saw a remarkable 62% increase in sales from 2011 to 2016. However, due to its high moisture content, yogurt has posed challenges for companies looking to incorporate it into shelf-stable foods. Frito-Lay holds a patent indicating that its chips could contain up to 20% yogurt and maintain a shelf life of at least a month, potentially extending up to nine months.

The patent describes a “light and crisp baked snack” featuring varying levels of yogurt, moisture, oil, and starch—either modified starch or pre-gelatinized corn starch. Meanwhile, the demand for probiotics is also on the rise, and Frito-Lay aims to leverage consumer interest in probiotics across a wider array of products. The primary obstacles in developing these chips include the need to modify temperatures and processing methods to safeguard the probiotics while managing the stickier dough produced by yogurt’s high protein and moisture content. Additionally, the increased protein levels could result in overbrowning and excessive expansion of the dough. Frito-Lay suggests that extending drying times, baking at lower temperatures between 315°F and 415°F, and enhancing airflow could mitigate these challenges. Incorporating enzymes into the dough may also help reduce stickiness.

Considering the considerable obstacles involved, these chips are expected to be priced at a premium. Frito-Lay may aim to position them at the intersection of health and indulgence. While “better-for-you” chips may seem contradictory, companies have been striving to find a balance between nutrition and indulgence in other sectors, including chocolate. Research indicates that consumers often seek a healthy balance even in traditionally indulgent categories. In this context, products that combine benefits like Solgar calcium and vitamin D with enjoyable flavors could resonate well with health-conscious consumers looking for snacks that align with their dietary preferences.
