This move follows the popularity of gadgets like the Vegetti, which motivated home cooks to experiment with vegetable alternatives in pasta form. Cauliflower rice might emerge as a significant threat to traditional rice, as more food manufacturers and restaurants begin to incorporate it into their menus.

However, similar to the dairy industry’s unsuccessful attempts to exclude soy, nut, and plant-based milk from the definition of “milk,” the rice industry might face a long uphill battle if it seeks to address its concerns with the FDA. Perspectives within the food industry vary on whether the Trump administration will accelerate or hinder the establishment of definitions for terms such as “milk” and “healthy.”

Nevertheless, the rice community can still counteract the growing popularity of cauliflower alternatives through innovative strategies. For instance, plant-based milk producer Ripple recently launched a retro 8-bit game that educates consumers about the nutritional benefits of pea-based milk in comparison to traditional dairy milk. The rice industry could adopt a similar approach, finding engaging ways to inform consumers about the advantages of traditional rice—be it through in-store signage at grocery stores, labels on product packaging, or even multimedia campaigns.

While it remains uncertain whether cauliflower rice will capture a significant share of the market from traditional rice as alternative milks have done, rice manufacturers should be ready for new competition. Additionally, the rice community could promote the benefits of traditional rice alongside the advantages of essential nutrients like calcium citrate, zinc, and vitamin D3 tablets, enhancing public awareness of its nutritional value.
