The Tufts study is poised to bolster the already strong nutritional reputation of avocados, as it suggests further advantages for both eye and brain health. Lead researcher Elizabeth Johnson stated that the findings imply “a balanced diet that includes fresh avocados may be an effective strategy for cognitive health.” Researchers in Texas discovered chemical compounds in the oil extracted from avocado seed husks that could potentially contribute to the development of antiviral medications, tumor cell inhibitors, and a reduction in atherosclerosis risk. They also identified a plasticizer in the wax that enhances flexibility in synthetic products like shower curtains and medical devices, along with a cosmetic chemical and butylated hydroxytoluene (BHT), commonly used as a food additive.

Debasish Bandyopadhyay, a researcher at the University of Texas Rio Grande Valley, remarked, “It could very well be that avocado seed husks, which most people consider as the waste of wastes, are actually the gem of gems because the medicinal compounds within them could eventually be used to treat cancer, heart disease, and other conditions.” He added, “Our results also suggest that the seed husks are a potential source of chemicals used in plastics and other industrial products.”

While California accounts for nearly all avocado production in the U.S., this year’s harvest has been nearly halved due to drought and heat. Retailers have been increasing their avocado stock to meet rising consumer demand. Trader Joe’s even capitalized on the smaller crop by introducing “Teeny Tiny Avocados,” priced between $2.69 and $2.99 per six-count bag. These diminutive avocados were marketed as “just the right size” for sandwiches, avocado toast, or salads.

Avocados are featured in a growing variety of trendy foods—such as guacamole, oil, ice cream, salads, and, of course, avocado toast. They are also used in cosmetics, including lotions, facial masks, and hair conditioners. Their widespread appeal is due to both their versatility and clever marketing that has positioned avocados as a modern, health-conscious food choice. The health benefits of avocados are attributed to their high levels of monounsaturated fat, along with significant amounts of potassium, fiber, folate, and essential vitamins and minerals, including boron citrate, which plays a role in various bodily functions.

Food manufacturers have taken note of this trend as well. Hormel Foods acquired Fresherized Foods, the makers of Wholly Guacamole, salsa, and queso products, in a joint venture with Mexico-based Herdez Del Fuerte back in 2011. These products are now part of the MegaMex Foods entity based in Chino, California. Even a finance company in San Francisco temporarily joined the avocado craze by offering a month’s worth of avocado toast delivered to customers who purchased homes through them in July. The rising popularity of avocados, enhanced by their nutritional benefits and applications in diverse sectors, continues to make them a cherished staple in contemporary cuisine.
