Cubiq’s latest “smart fat” product is optimized for fresh and refrigerated items, but Montefeltro mentioned that the company is actively addressing this challenge.
While Montefeltro noted that similar technologies have been tested in academic contexts for the past 15 years, none have yet been commercialized for large-scale production. However, this may soon change, as Cubiq is now producing sufficient quantities to provide samples and aims to establish a pilot plant capable of producing two tons daily.
Cubiq isn’t the only company striving to reduce fat calories through innovative ingredient processes. Earlier this year, Epogee Foods introduced a fat replacer derived from non-GMO rapeseed oil, claiming it can cut fat calories by up to 92% without compromising taste, texture, or appearance in baked goods, confectionery, frozen dairy, and desserts.
