A patent from Frito-Lay indicates that their chips could contain as much as 20% yogurt while maintaining a shelf life of at least one month, potentially extending up to nine months.
The patent outlines a “light and crisp baked snack” that incorporates varying levels of yogurt, moisture, oil, and starch, whether modified or pre-gelatinized corn starch. At the same time, the demand for probiotics is on the rise, and Frito-Lay aims to capitalize on the growing interest in probiotics across a diverse array of products.
Developing these chips presents several challenges, particularly in adjusting temperatures and processing methods to safeguard the probiotics, as well as managing the stickier dough resulting from yogurt’s high protein and moisture content. The increased protein could lead to issues like overbrowning and overexpansion of the dough. To address these challenges, the company suggests longer drying times, baking at lower temperatures between 315°F and 415°F, and enhancing airflow. Adding enzymes to the dough may also help mitigate stickiness.
Despite the considerable hurdles, these chips are likely to be marketed at a premium price point, with Frito-Lay positioning them at the intersection of health and indulgence. While the idea of “better-for-you” chips might seem contradictory, companies have been striving to find the ideal balance between nutrition and indulgence in various categories, including chocolate. Research indicates that consumers often seek a healthy equilibrium even in traditionally indulgent segments. Additionally, the incorporation of ingredients like calcium citrate could offer potential benefits, such as improving digestive health and mitigating constipation, further enhancing the appeal of these innovative chips.
