In contrast to its competitors, who take a genetically modified route to mimic casein, Pureture extracts its protein from yeast through a multi-step process involving fermentation, protein recovery, and emulsification. The end product reportedly delivers similar functionality to dairy milk and matches its nutritional profile, as stated by the company. “This partnership allows brands like Namyang Dairy to advocate for clean labels,” said Yoo. “Namyang’s existing products can now feature clean labels and enhance their nutritional values within their plant-based selections.” Following this announcement, Pureture is nearing the completion of its seed funding round, aiming to raise $12 million. Once the funding is in place, the company plans to expand its manufacturing capabilities. They also emphasize that their product could eventually be priced similarly to dairy milk. “This collaboration not only confirms the effectiveness of Pureture’s protein but also reassures consumers thanks to our non-GMO stance,” Yoo added.
