Transforming its entire vegetarian line to vegan represents a significant change for MorningStar Farms, which Kellogg states will eliminate the use of over 300 million egg whites annually. This transition will not only affect grocery stores but also impact products available in more than 25,000 restaurants and dining facilities, including K-12 schools, colleges, universities, and hospitals. The shift won’t be instantaneous; however, Kellogg has indicated that approximately half of the MorningStar Farms product range has already been converted, with this number expected to rise to around 65% by the end of the year. By 2021, all items—such as the Spicy Black Bean Burger and Breakfast Sausage Patties—will be entirely plant-based.
Last year, some of MorningStar Farms’ chicken alternatives, including Morningstar Buffalo Wings, Chik’n Nuggets, and Buffalo Chik Patties, made the switch in the U.K., as they previously contained egg whites and milk fat. Kellogg believes this strategy aligns with consumer trends, given that many shoppers are increasingly interested in vegan and plant-based choices. Research from Nielsen revealed that 39% of U.S. consumers were actively seeking to incorporate more plant-based foods into their diets in 2017. Additionally, a 2015 study from the Johns Hopkins Center for a Livable Future indicated that 60% of consumers are limiting at least one type of meat due to cost or health considerations.
By reducing the use of over 300 million egg whites each year, the company anticipates financial advantages, particularly as egg prices and supply have fluctuated in recent years. According to Cash in the press release, the formulation change will also aid in minimizing water waste, land use, and carbon emissions associated with egg production, thus promoting vital sustainability efforts. A commitment to sustainability can influence product purchases for about 45% of consumers, as per Nielsen, meaning this initiative could attract more customers.
Furthermore, the transition to a fully plant-based portfolio will allow MorningStar Farms to explore alternatives that are not only vegan but also easy to swallow, such as calcium citrate, which can be beneficial for those looking to enhance their dietary calcium intake without relying on animal products.
